Mead is honey, water, yeast and time. Of those four, honey decides almost everything: the colour, the aroma, the body, and the flavour you taste long after the last sip. That's why every drop of honey we use is sourced locally, and why we think the people who produce it deserve to be named.
Our honey suppliers
Southern Honey
Where: Southern Highlands, NSW, just down the road from us.
What they do: Southern Honey's honey comes from their own bees, kept at sites across southern NSW. They're migratory beekeepers who move their hives to wherever it's flowering at the time, following the blossom from Brown Barrel in Bowral to Canola in Cootamundra and Spotted Gum in the Shoalhaven.
What they supply us: the honey behind our meads, including the bulk honey for God's Nectar, our traditional mead.
Why local honey matters
- Taste of place. Honey carries the flavour of the flowers the bees worked. Local honey gives our mead a local character you can't get from an anonymous blend.
- Supporting beekeepers. Australian beekeepers face drought, bushfire and pests. Buying direct keeps their money close to home.
- Knowing exactly what's in the bottle. We know who made our honey and where it came from. No mystery imports, no syrups.
